Cock-A-Leekie Soup

leeks, chicken, whipping cream, butter



Ingredients



4 large leeks
3 cups water
1 1/2 teaspoons salt
1 1/2 cups chicken stock or 1 1/2 cups chicken broth
1/8 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons chicken fat
1/2 cup whipping cream
1 cup cooked chicken, diced
3/4 cup prune, diced (optional)
salt and pepper

Remove root end and most of the green portions of the leeks. Cut in half and wash well. Slice in 1/8 inch slices.
Boil water over medium-high heat and add salt and leeks. Bring to a boil and reduce heat to low. Cover and simmer 5 to 7 minutes until tender.
Add broth, nutmeg, and butter. Bring to a boil over medium-high again.
Reduce to low. Stir in cream. Add chicken and prunes if desired. Adjust seasoning, and warm through.
