Tomato Ketchup or Catsup

Ingredients

4 quarts plum tomatoes
• pickling salt
• 2 cups peeled chopped shallots
• 3 mild red peppers, such as Red Shepherd
• 1 head garlic
• 1 cup dark brown sugar or 1 cup sucanat
• 2 cups apple cider vinegar
• 1 tablespoon celery seed
• 4 tablespoons sweet Hungarian paprika
• 1 tablespoon hot spanish paprika
• 1 tablespoon ground ginger
• 2 tablespoons allspice berries
• 2 teaspoons black peppercorns
