4 quarts plum tomatoes- pickling salt
- 2 cups peeled chopped shallots
- 3 mild red peppers, such as Red Shepherd
- 1 head garlic
- 1 cup dark brown sugar or 1 cup sucanat
- 2 cups apple cider vinegar
- 1 tablespoon celery seed
- 4 tablespoons sweet Hungarian paprika
- 1 tablespoon hot spanish paprika
- 1 tablespoon ground ginger
- 2 tablespoons allspice berries
- 2 teaspoons black peppercorns
