- 1 tablespoon instant coffee granules
- 1 tablespoon salt
- 2 cups medium rye flour
- 1 1/2 tablespoons unsweetened cocoa powder
- 2 cups whole wheat flour
- 2 cups bread flour or 2 cups unbleached all-purpose flour
- 2 tablespoons vegetable oil
- 1 cup raisins
- 3 -4 tablespoons cornmeal
- 1 tablespoon cold water
- 1 egg white
