Chicken with Wine: Coq au Vin

Ingredients
- 1 1/2 cups pearl onions
- 1/2 pound salt pork or bacon, diced
- 1 whole chicken, cut into 8 pieces
- 1 cup all-purpose flour
- 1 tablespoon Emeril's Original Essence, recipe follows
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 pound button mushrooms, quartered
- 1/4 pound cremini mushrooms, quartered
1/4 pound oyster mushrooms, sliced- 1 tablespoon minced garlic
- 1/2 cup cognac
- 1 bottle dry red wine (Cote du Rhone or Pinot Noir)
- 2 cups dark chicken stock
- Bouquet garni (a few sprigs of parsley, 1 bay leaf, 3 sprigs thyme, and some black peppercorns)
- 1 tablespoon butter
- 1 tablespoon flour
- 2 teaspoons fresh thyme
- 15 toast points
- 1/4 cup chopped parsley
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried leaf oregano
- 1 tablespoon dried thyme
