Brined Pork Chops with Soft Parmigiano Polenta
celery, milk, carrots, onion, sugar, parmigiano, garlic, fennel, coriander, bay
Ingredients
- 1/2 cup salt, or to taste
- 1/3 cup sugar
- 2 tablespoons fennel seed
- 2 tablespoons coriander seed
- 1 teaspoon crushed red pepper flakes
- 3 bay leaves
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 ribs celery, diced
- 4 cloves garlic smashed
- 1 1/2 quarts cold water
4 bone- in pork rib chops- 1 tablespoon wild fennel pollen*
Soft Parmigiano Polenta, recipe follows- 1 1/2 cups milk
- 1 1/2 cups water
- 1 bay leaf
- Salt
1 cup long cooking polenta- 1/2 cup grated Parmigiano
1/4 cup mascarpone cheese
